Cube and melt a regular block of cheese (or Velveeta) and slowly add milk and butter until you get the consistency you want. You might not have to add as much milk/butter if using Velveeta.

melt a few tablespoons of butter in a pan and add a few tablespoons of flour, cook on low heat for about 3 minutes, then add 1-2 cups of milk. Simmer for a few until it thickens, then add your favorite cheeses.

I'm just giving you fair warning. You seem so concerned about your son being gay and cheese sauce is just a little too swishy if you ask me.

I make Mac and cheese sauce with cheddar. I melt 3 tablespoons butter in a saucepan mix in 3 tablespoon flour and a pinch of nutmeg until it makes a paste. The. Add 3 cups milk. Cook until it thickens like a sauce texture. Then add 3ish cups cheddar and 1/2 to 1 cup shredded Parmesan.  Remove from heat and throw over pasta

Cauliflower is actually an excellent alternative for the milk. :D

Just boil cauliflower, blend when soft, and mix in the cheese! It's pretty good!
