Hubby hasn't been feeling too good the last 4 days and asked for a soup for lunch. I offered chicken noodle and my chicken tortilla and he said he wanted something "different". Any ideas? I'm clueless.
The only soup I ever eat aside from chicken noodle and its variations is tomato basil. I don't have a recipe handy though
cabbage soup. It is so delicious.
Main component is cabbage, then throw in stewed tomatoes, green beans, corn, potatoes onions and any other random vegetables. Cover with half chicken broth, half water, season it to DEATH with black pepper, cajun seasoning, garlic, onion powder, salt. Let it heat to a rolling boil for 30 minutes and then simmer about a hour and then eat up.

I make a potatoe soup that is yummy. I get chicken broth like 8 cups and cut up and skinned potatoes and cook till soft then sorta mash and stir until chunky but smooth. Top with sour cream,bacon, cheese and some chives it's super yummy!

I didn't even think of potato soup! I have my grandma's recipe on hand that's freaking delicious. He doesn't get a say, that's what I'll be making for lunch. :P
lol sounds like my SO...However what they dont know dont hurt them. I use your normal chicken noodles in a bit pot and i add a can of italian spiced diced tomatos and then add carrotes, onion, celery and other veggies sometimes a lil Clamato (no alcohol lol)
SO thinks is homemade soup :) And I get to finish off the veggies in the fridge.. hehehe
I always make red lentils when someone is sick. It's super easy, just wash and boil the lentils, sautee some onions in a pot, add the boiled lentils and some chicken boullion and curry, add some extra water, cook med-high 20 minutes then add vermicelli or crushed angel hair and cook 10-15 minutes more. Boom, nice, inexpensive and delicious heavy soup. I always squeeze fresh lemon juice into my bowl too :) it goes well with basmati rice.

some basil, all seasoning, red pepper flakes, onion powder, garlic powder,thyme, rosemary
I let that biol and simmer down about an hr or so.
I use a sieve and take out the peppercorns. Then I add in some fresher cut up veggies to it and put it back on, if it kinda tasteless I sometimes add in a chicken or a beef stock that I make myself (but store bought will work too) then I add in either orzo pasta or cooked rice, oh almost forgot a little tomato juice for color. I usually cook that up about another hr or two.
Or broccoli soup...my fav.
Broccoli usually 1 head
About 3 tablespoons of butter
1 stalk of celery with leaves, chopped
About 3 tablespoons all-purpose flour
1 cup of milk
1 cup heavy cream
2 cubes of chicken boullions or homemade ( I use homemade stock)
roughly a teaspoon worcestershire sauce
1 1/2 cups of cheddar cheese.
- Place broccoli in a medium saucepan with water to cover, bring to a boil, then reduce heat and simmer until tender, 15 minutes. Remove broccoli and reserve cooking water.
- In the same pan, melt butter over medium heat. Cook onions and celery in butter until tender, 10 to 15 minutes. Stir in flour, milk and cream. Dissolve bouillon in 2 cups reserved broccoli water. Stir into soup. Season with Worcestershire, paprika and salt. Stir in cheese and cook 10 minutes more.
