Fruit, veggies, nuts are good for snack. I like to put walnuts and dried cranberrys in my salads. Then I do like fish and chicken recipes for dinner like bread em and bake em or make casseroles out of em. You shred the meat, add eggs , milk and rice. And top with bread crumbs mixed in butter and cheese. We also stuff vegetables with eggs or meat and bake them for 15 minutes.
I buy pre cut up red/orange/yellow/and green peppers. Also, lots of fruit, berries, kiwi, bananas.
for lunch I usually have home mad pizza on a tortilla, cut up pepperoni or ham and some cheese and pineapple.
for breakfast I make French toast, just toast and eggs, yogurt and berries.
some times I'll make scrambled eggs and add spinach.
Freeze dried mangos from Trader Joes, lots of fruits and veggies- when we are home we eat fresh fruit and veggies for snacks, pretty much exclusively. We also have cashews, almonds, walnuts, pistachios, Greek yogurt, pumpkin flax granola, ten grain hot cereal, home made bread for toast or a quick bite with butter and cheese or peanut butter, raw sugar for baking and sweetening, frozen berries, frozen peas. Love frozen bananas with Milk. Those are snacks. Oh and the kashi brand fruit and oat bar things. Nom.
Meals, we do tacos, burgers, chicken, soup, mixed rice, casseroles, Mac n cheese- I make a basic white sauce- 1/2 stick butter, 1/4 c flour, 2 c milk and then toss in whatever cheeses we have. I like to add a bit of pepper jack, jack and cheddar cheese. Sometimes ham. Organic eggs. Pretty much anything, but I make it from scratch. And because I'm on a budget the majority of our food is not organic. I figure standard fresh is healthier than processed.
We have canned beans and canned whole tomatoes for chili, chicken noodle soup for sick days, ritz and graham crackers. Other than that, pretty much cook from scratch.
I'm not perfect with it. We use ghiradelli choco chips for cookies. And when baking I do 1/2 whole wheat and 1/2 white flour. Usually sub 1/2 applesauce for butter and add ground flax seed.
